What you’ll need:
Cinnamon Roll Dough
- 1 1/2 Cups Milk
- 1/2 Cup Butter
- 6 1/2 Cups All Purpose Flour Divided
- 2 Packets Rapid Rise Yeast .25 oz Packets
- 1/2 Cup Sugar
- 1 Teaspoon Salt
- 1/2 Cup water
- 2 Large Eggs
- 1/4 Cup Melted Butter
Filling
- 2 Cups Brown Sugar
- 2 Tablespoons Cinnamon
- 1 Cup Butter Softened
Cream Cheese Frosting
- 1 8 oz Pack Cream Cheese
- 1/4 Cup Butter
- 2 Cups powdered sugar
- 1 Teaspoon Vanilla
- 3 Tablespoons heavy whipping cream
Butterscotch Topping
- 1/2 Cup Brown Sugar
- 4 Tablespoons Butter
- 1/2 Teaspoon Salt
- 1 Teaspoon Vanilla
- 1/2 Cup heavy whipping cream
Step 1
Melt 1/2 cup of butter with the milk in a saucepan.
Step 2
Once the butter is melted, take it off the heat and let it cool down a little.
Step 3
Get your mixer ready and toss in 2 1/2 cups of flour, yeast, sugar, and salt. Give it a quick mix.
Step 4
Now, add the water, eggs, and that warm butter/milk mixture from earlier. Mix it all together.
Step 5
Time to make the dough! Add the remaining flour, a 1/2 cup at a time, until the dough forms a ball. Once it looks like a ball, you’re good!

Swap out the mixing blade for a dough hook (or knead it by hand if you’re feeling strong 💪). Let it mix for 5 minutes.
Step 7
Take the dough out, sprinkle some flour in the bowl, and put the dough back in. Let it rise for 10 minutes.
Step 8
While the dough is rising, get the filling ready. Mix brown sugar, cinnamon, and softened butter in a bowl until smooth. Use your hands if needed to get that perfect spreadable texture.
Step 9
Roll the dough out into a long rectangle. Make sure it’s much longer than it is wide to get those giant cinnamon rolls!

Spread the filling evenly over the dough.
Step 11
Start at one short end and roll the dough up like a jelly roll.
Step 12
Cut the long roll right in the middle, then make two more cuts about 6 inches from the center on both sides.

Place the rolls, swirl-side down, in a greased 9×13 pan.
Step 14
Don’t let any dough go to waste! Cut the extra dough into regular-sized rolls and set them aside to bake later.
Step 15
Melt 1/4 cup butter and drizzle it over the rolls. Let them rise for 30 minutes.
Step 16
Preheat the oven to 375°F. Bake the rolls for 20 minutes. Then cover them loosely with foil and bake for another 10 minutes.
Step 17
While the rolls are baking, prep your toppings.
Step 18
In a saucepan, melt the cream cheese and 1/4 cup butter together.
Step 19
Once melted, stir in the powdered sugar, then add vanilla and salt. Set aside.
Step 20
In another saucepan, combine brown sugar, butter, and cream. Bring to a boil and keep it boiling for 5 minutes while stirring. Take it off the heat.
Step 21
Add the vanilla and salt to the butterscotch mixture and set it aside.
Step 22
When the rolls are done, drizzle them generously with the cream cheese frosting in one direction, then go the opposite way with the butterscotch. Enjoy!
Our Story
This was the first recipe I tried when Covid hit in 2020. It’s a simple homemade cinnamon roll recipe, just on a bigger scale. The butterscotch drizzle is what really makes it special. I can’t remember where I got this recipe, but it was so good that I printed it out and stuck it in my recipe binder.
These rolls are massive (and delicious!), so you probably won’t make them often. Make sure you’ve got plenty of counter space or a large cutting board when you’re rolling them out.
They’re perfect for a cozy Saturday morning while watching a Disney movie (like Beauty and the Beast) or for a holiday breakfast.
